Fresh, wild St George Mushrooms are in season from mid April into summer and are so called at they start appearing around St George's day. We see multiple dishes that suit the St George well, but this roast Brill recipe from Country Life is a favourite.
These are also available in a wild mushroom mix which includes St George, Girolle and Mousseron which are now in season.
